Pap and Gravy Recipe

Did you know: Maize was introduced to Africa from the Americas between the 16th and 17th century.


For pap:

  1. 750 ml water
  2. 750 g maize meal
  3. 1 tablespoon salt

For tomato and onion gravy:

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 1 teaspoon chopped garlic
  4. 1 can chopped tomatoes or 6 fresh chopped tomatoes
  5. 1 teaspoon sugar
  6. Salt and pepper, to taste


For pap:

  1. On the one hot plate bring the water and salt to a boil.
  2. Pour the maize meal into the boiling water.
  3. Stir the maize meal with a wooden spoon until it becomes one lump.
  4. Keep stirring the pap every 10 minutes.

For tomato and onion gravy:

  1. On the other hot plate heat olive oil in a pot, add onion and brown lightly.
  2. Add garlic and heat with onion.
  3. Add chopped tomatoes and brown sugar and let simmer for 5-10 minutes.
  4. Add salt and pepper to taste, and lastly add basil.
