Chicken and
Corn Chowder

Ingredients

  1. 80 grams butter
  2. 1 onion chopped
  3. 1 red pepper chopped
  4. 1 jalapeño deseeded sliced
  5. 1/4 cup flour
  6. 1 tablespoon paprika
  7. 4 cups chicken stock
  8. 2 medium potatoes cubed
  9. 1 tablespoon Worcestershire sauce
  10. Meat of 1 shop bought roasted chicken or 2 medium chicken fillets steamed and shredded
  11. 1 cup corn
  12. 1/2 teaspoon crushed red chillies
  13. 1/2 teaspoon salt
  14. 1/4 teaspoon black pepper
  15. 1/2 cup heavy (thicken ) cream

Method

  1. Heat butter in a thick based pan until butter melts add the onion and red pepper and jalapeño and cook until it all soften slightly
  2. Add the flour sauté , paprika and chicken stock with the potatoes and cook until potatoes are soften 10 to 15 minutes
  3. Stir in the chicken, corn, Worcestershire sauce, salt, pepper,crushed chillies and continue to cook for 5 minutes
  4. Add the heavy cream
  5. Serve and enjoy
